RIGATONI ALLA VODKA

This is one of my favourite recipes. I love pasta and when I close my eyes I almost think I am in Italy!!

SERVES 4


INGREDIENTS


1 can San Marzano whole tomatoes
1 small Spanish onion, sliced thinly
30ml water
3 tbsp butter (divided)
1/2 cup cream (whipping or light)
4 cup rigatoni
1 tsp sugar
2 tbsp vodka
2 tsp salt (divided)
1 tbsp jarred Calabrian chilies or chili pepper flakes
1/2 cup finely grated parmesan cheese


DIRECTIONS



In one pan add in 1 tbsp butter, 30ml of water and the Spanish onion. Allow to cook on low, we do not want to colour the onions.

In a separate pan add in your tomatoes and crush by hand. Add in 1 tsp salt and sugar. Bring to a simmer and reduce for about 30 minutes. We want most of the water to evaporate and leave us with a concentrated tomato flavour.

Turn on high heat, add in your vodka and cook off the alcohol for a minute or so. Then return the heat to medium. Add in the onions, then add in the cream and 2 tbsp of butter.

Bring your water to a boil with 1 tsp of salt and cook your pasta until al dente. Save 1-2 cups of pasta water, then strain your pasta and add it into the pan. It is best to finish cooking the pasta in the sauce. Add in the noodles and cook for two or three minutes. Add in the cheese and then serve and enjoy.

Serve with extra parmesan and enjoy.
